One of my sister's good friends from Georgia, Heather, has this great recipe for BBQ Muffins. These are very yummy, easy, and versatile. You can change the "stuff" in the middle to be taco flavored, Italian, Mexican, or even dessert. But you must try the BBQ version first. It is a little on the sweet side so you might reduce the sugar a little. These freeze pretty well too.
1 can of Pillsbury biscuits - or the generic version
1 lb of ground beef
1/2 C Ketchup
3 T brown sugar
1 tsp cider vinegar
1/2 tsp chili powder
1 C shredded cheddar cheese
Flatten biscuits and put into greased cupcake tins. Cook the ground beef, drain, then add the rest of the ingredients. Fill biscuit cups with hamburger and bake at 400 degrees for 7 min. Sprinkle with cheese and bake for an additional 5 min. until cheese is melted.
If you do the taco version you could top with sour cream, lettuce, and tomatoes.
